1 medium cabbage (weight of cabbage is about 5 lbs.) carrots (usually 1-2) green peppers (usually 1-2) onions optional To flavor.. 1 tbs salt 1c vinegar 1/4c water 1 tsp mustard seeds 1 tsp celery seeds 1 1/2 c sugar This is a single batch I 'm sure you can figure out the math of the yield for other than this.
Directions: Grate or chop the cabbage, carrots, peppers, onions. Put in large bowl. Sprinkle salt over this mixture.Let set for 1 hr. While this is setting put: vinegar, water, mustard seeds celery seeds and sugar in a medium size sauce pan. Bring this to a hard rolling boil. Let boil for about a minute. Turn off the burner. Let cool. By the time the hour is up this solution should be cool. Squeeze out the moisture from the cabbage mixture, then pour the now cooled solution over the cabbage mixture. Box and freeze. If you want a larger batch you just double or triple everything. You do the math. We used the cabbage from our garden. Some of the cabbages were med. and some were very small . We weigh them on a kitchen scale to get a ball park figure.
